Wine, Cocktails and a pastry called “Snowball”

With its splendid location and charming medieval atmosphere, Rothenburg ob der Tauber located on the famous Romantic Road in Germany, stands as a world-famous relic of the lovely architecture of a bygone era. The silhouette of gate and defense towers conveys the aura of a fairy tale. As you enter through one of the old gates, you will immediately feel secure within the time-honored walls of this romantic place. As you pass along, you will notice some breathtaking romantic scenery over the roofs of the old town, its enchanted alleys, the magnificent mansions, and the idyllic valley, where the River Tauber peacefully meanders through the wonderful nature.

 

WINE EXPERIENCES

Rothenburg offers a variety of hands-on activities for your guests. They can explore the vineyards surrounding Rothenburg ob der Tauber with winemaker Albert Thürauf, followed by a wine tasting in the wine cellar. As early as 912, wine growing is documented in files, listing the location “Steinach”. A visit of the “Rothenburg Wine Trail” (visitors can also do that on their own) may help to appreciate the varieties of grapes and vines. The wanderer will find out about historical background, geological requirements, climate and the whole story behind. The wine trail presents no less than 160 different kinds of grape.

Thanks to wine growing, today medieval times meet Mediterranean charm in the streets of the little town high above Tauber-Valley. It’s easily felt at a stopover in any of the traditional wine inns, where one might enjoy just a glass of the excellent local wine.

A SWEET TREAT TO ENJOY

If you have a sweet tooth, local bakeries show how Rothenburg’s famous snowballs (“Schneeballen”) are made, a traditional Rothenburg specialty. Its origin can be traced back to medieval times. Due to its storage life such pastry was food for the road e.g. for pilgrims. This delicious pastry is made from a mixture of cream, butter, fresh eggs, Franconian distilled spirit from plum, flour and sugar. These ingredients make a fine short pastry which can be stored up for to 3 weeks. Locals prefer pure “Schneeballen”, without any extras just powdered with cinnamon. But Snowballs are also offered with covering of fine chocolate or flavors of almond. The bakeries of Striffler and Friedel offer on request a view behind the scene.

First Veggie Cabin in the Alps

Silvia, the cabin manager shares her special veggie recipes so they can be enjoyed at the comfort of your own home.

Instead of schnitzel and bacon platter, the menu at the “Hündeleskopfhütte” features cheese noodles and vegan zucchini lasagne. Silvia Beyer is the first hut manager in the Alps not to put meat on the table. At the end of May 2015, the native Nesselwangerin will take over the rustic hut as the new tenant and make her dream come true at an altitude of 1,180 metres: she will open the first vegetarian mountain hut in the Alps. “The time is ripe for it – also in the Allgäu”, the landlady, who is also a member of the vegetarian association, is convinced.

INGREDIENTS CHEESE NOODLES – “KÄSESPÄTZLE” RECIPE FOR 2 PERSONS:

  • 200 g spelt flour
  • 200 g wheat flour
  • 4 eggs
  • 1 teaspoon sea salt
  • 200 g grated mountain cheese, at least 6 months old
  • 2 tablespoons sunflower oil
  • 12 tablespoons of water
  • 2 onions
  • black pepper from the mill
  • fresh chives, to taste

PREPARATION OF THE CHEESE NOODLES:

  • Sieve the flour into a bowl, make a depression in the middle, mix with eggs, salt and a little water from the middle. Gradually add the remaining liquid. Make sure that no lumps are formed. Beat the dough until it forms bubbles.
  • Brush the dough in portions in boiling salted water. It is best to use a sparrow slicer. The spaetzle are cooked when they float on the surface.
  • Remove the finished spaetzle from the boiling water with a skimmer.
  • Cut the onions into fine rings and fry them in the pan until they are glassy. Put the fresh spaetzle on the onions.
  • Add grated cheese and fresh black pepper from the mill. Add the spaetzle once more and let them melt with the lid of the pan closed until the dish is golden yellow.
  • Garnish with fresh chives. A colourful salad is suitable as a side dish.

A green salad and a slice of bread goes well with cheese noodles. An (Allgäuer) beer is the ideal drink with a hearty meal.

RECIPE FOR VITELLO POTATO

WITH THEIR POTATO STAND CASPAR PLAUTZ THEO LINDINGER AND DOMINIK KLIER CONVINCE NUMEROUS CUSTOMERS AND BRING NEW SPICE TO THE VIKTUALIENMARKT IN MUNICH

Theo Lindinger and Dominik Klier have been fond of potatoes and good food for many years. But “we never expected that we would one day have the good fortune to take over a stand at the Munich Viktualienmarkt”, Theo remembers with shining eyes:

The two are still enthusiastic about their work at the “Caspar Plautz” potato stand and their regional products – and it is precisely this combination of tradition, modernity and passion that convinces numerous satisfied customers every day.

RECIPE FOR VITELLO POTATO

Ingredients for 4 people:

  • 1 boiled fillet of milk calf (approx. 700 g)
  • 2 tablespoons coarse sea salt
  • 1 tablespoon of peppercorns
  • 2 bay leaves
  • 2 shallots, roughly diced
  • 1 carrot, roughly diced
  • 4 large baked potatoes
  • Mayonnaise
  • 1 organic lemon (juice and pulp)
  • 1 anchovy
  • 4 tablespoons capers
  • 100 g panco flour (Japanese breadcrumbs)
  • 5 tablespoons capers
  • 4 tablespoons rapeseed oil

PREPARATION:

  • Remove tendons from the boiled beef and cut a check pattern on the fat side with a sharp knife. Rub the meat with salt.
  • Place the peppercorns, bay leaf, shallots and carrots on a baking tray, add 200 ml of water. Place the boiled fillet on the vegetable bed. Cook in the oven at 140 degrees (fan oven) for 40 minutes. The core temperature should be 56 degrees at the end.
  • Let it cool down. Pour the meat juice with the vegetables through a sieve and use it in a screw glass in the refrigerator for the next soup or to refine the mayonnaise.
  • Prepare the baked potatoes.
  • Refine and puree the mayonnaise with lemon, anchovy and capers.
  • Brown the panko flour and capers with a little oil in a pan.
  • To serve, place the mayonnaise on the buttered potatoes, place wafer-thin slices of the boiled beef on top and sprinkle the panko-capers mixture on top. Parsley or chervil can be added to enhance the appearance and flavour of the dish.

We can only recommend the one-time investment in a meat thermometer. Especially as a hobby cook you can hardly gain enough experience in preparing meat to get it out of the oven to the perfect cooking point.
